Three Incredible (and Incredibly) Easy Homemade Ice Cream Recipes

There's nothing better on a hot summer evening than a bowl of ice cream. Everyone has not only a favorite flavor, but also fond memories of enjoying a bowl or a cone during summers gone by. It's a quintessential summer dessert, and somehow getting it homemade made it even better. It seems, though, that homemade ice cream was a treat reserved for special occasions, because of the work that went into it. You had to have the right equipment and all the ingredients, including the rock salt and someone willing to churn the handle. There are, of course, electric churns, but that is still not something that everyone has. No-churn ice cream is just as good, though, and almost absurdly simple. Here's a few recipes to try.

BLUEBERRY ICE CREAM

It's only three ingredients, and it only takes a few minutes to assemble. The hardest part of this recipe is waiting for it to freeze enough to eat. You can use either fresh or frozen fruit, and you can substitute any other fruit for the blueberry. Go tropical with a frozen blend of mangoes and pineapples, or keep it classic with strawberry.  There are so many possibilities.

VEGAN NO-CHURN ICE CREAM

There's even ice cream for those who might need a special diet, or is lactose intolerant. The great thing about this recipe is that it's dairy-free and refined sugar-free. It's customizable, too, but who doesn't want a creamy chocolate ice cream? This one has a few more ingredients, but the payoff is a creamy texture that you'd never guess is dairy-free.

AVOCADO-LIME NO-CHURN ICE CREAM

Avocado's creamy texture makes a great base for no-churn ice cream. This is another good one for anyone who might be lactose intolerant. The avocado's flavor is mild enough that it won't overpower the lime, and creamy enough to balance out the tart citrus. This recipe is simple, with only six ingredients, but it will be sure to impress. Have some toppings on hand, because this one lends itself to things like coconut flakes or pistachios.

Go out and enjoy your summer!
